主讲人简介:
陶莎于2013年获中国农业大学农产品加工及贮藏工程专业博士学位,现为中国农业大学信息与电气工程学院讲师。主要研究偏向为基于电化学手艺的农产品质量快速检测手艺,现主持尊龙凯时北京市重点实验室开放课题《基于壳聚糖修饰电极的油脂过氧化值电化学检测手艺研究》,并作为课题主干加入国家重点研发妄想子课题等国家级项目6项,省部级科研项目6项,揭晓相关学术论文19篇,其中SCI/EI检索论文7篇,加入编写专著2部。
Sha Tao was awarded PhD degree in agricultural products processing and storage engineering in 2013 from China agricultural university. She serves as the lecturer of institute of information and electrical engineering, China Agricultural University. Her primary research interests are in the field of fast detection techniques for product quality based on electrochemical technology. Now she presides over Beijing municipal key laboratory open topic < Oil peroxide value based on chitosan modified electrode electrochemical testing technology research >. She was as the key person of the national research project joined the research and development of the national key program corpus 6 items, provincial scientific research project 6 items. She had 19 papers related to these items, including 7 SCI/EI papers, and participated in the preparation of 2 monographs.
主讲内容:
食用油不但能够为人体提供一样平常所需热量,同时还能增补人体所需必需脂肪酸,别的也是脂溶性营养素的载体,能够提高人体对这些营养素的吸收率。作为人们一样平常生涯中最主要的基本生涯资料,同时也作为食物工业和烹饪工业的主要基础质料,它的质量清静关系到食物工业的生长、人民身体的康健以及社会的协调稳固。近年来随着人们对食用油品质的一连关注、油脂精炼手艺的一直提高,以往影响其产品质量的酸价、过氧化值、溶剂残留量超标等问题获得显着改善。但同时有研究批注,随着油脂精炼水平的提高,会爆发一类新的污染物——氯丙醇类化合物。
本次讲座主要围绕氯丙醇的泉源、毒性、在食物加工中的形成机理及控制途径等睁开讨论,并先容课题组在氯丙醇检测中的相关希望。
Edible oil is not only able to provide daily needs of the human body heat, but also to replenish essential fatty acids for the human body, in addition, as the carrier of fat soluble nutrients, can improve the body's absorption of these nutrients. As the most important material for the people's daily life and an important basis for the raw materials of food industry and cooking industry, its quality and safety are related to the development of the food industry, people's physical health and social harmony and stability. In recent years, as people continue to focus on edible oil quality, with ever-increasing oil refining technology, the acid price affected the product quality, peroxide value and solvent residue amount that exceeded the threshold are solved. But with the improvement of oil refining, investigation indicates that a new kind of pollutants will be produced, such as isopropyl alcohol.
This talk will be summarized the investigation of chloropropanol such as characteristic, origin, toxicity, examination, defence method and limit standard in some country. The research progress of detection technique for Chloropropanol is also introduced in this talk.
